Seminar sequence:

  • Preparing, working and shaping 60 kg of dough into 12 different kinds of bread according to specially developed recipes
  • In addition to sourdough, scald, soaker and mash will be freely used
  • Explanation of various fermentation processes for baking
  • Both short and long proofing of the dough for great taste and good keeping
  • Introduction to the secret of sourdoughs and how to make them
