Professional knowledge about dough
What is meant by a good dough? A good dough is rich in oxygen, light and fluffy in consistency, smooth on the surface and flexible in the tension. The gluten in the flour must be opened up so that the dough becomes a homogeneous mass. You can of course also knead doughs traditionally by hand. But since the incorporation of oxygen is so important, you must forcefully dig in for around 30 to 40 minutes. You have it much easier with a dough kneading machine. This produces a better result in only 12 minutes.
Don’t be misled: kneading dough is promised by many domestic appliances today. The result, however, often has nothing to do with a kneaded dough but rather with blending or whisking the ingredients. For a professionally kneaded dough, we definitely recommend the Centra Spiral Kneading System.
Centra spiral kneading system
Both the kneading hook as well as the bowl turn here at the same time. But they rotate with different speeds so that a slight displacement results and the kneading hook plunges into the dough in a different place again and again. In this way, each section of the mass is reliably reached. The dough is thoroughly kneaded – from front to back, from top to bottom – better than is possible by hand. Plenty of oxygen is incorporated thanks to the constant submerging of the dough hook. As a result, you get a dough with wonderful elasticity and perfect surface tension. Our dough kneading machines are very flexible. The strong kneading arm works from the middle of the bowl outward to its edge. Even small and very small quantities (up to 10% of the maximum quantity) can be processed – still with an optimal kneading result. Strength is required to knead dough. That’s why our machines have powerful industrial motors, which even though they provide a great deal of torque, use little wattage. The power transmission takes place via an extremely sturdy and virtually maintenance-free chain drive. The housings are made of sturdy metal. With our dough kneading machines, you get the finest professional technology.
Kneading dough correctly
Our kneading machines work especially powerfully. Please make sure that the doughs are not kneaded too long. Because too much kneading can damage the dough. When the gluten is over-kneaded, the bread will no longer rise correctly. That’s why each kneading machine has a built-in timer, with which the correct kneading time can be set and monitored. With 1-speed machines, the dough is kneaded completely with one constant speed. On the other hand, with 2-speed machines the dough is first mixed slowly and then kneaded intensively. This is an advantage especially with high gluten wheat or spelt doughs.
Guideline: it is ideal to tailor the kneading machine to the capacity of the oven. And: better to buy a larger kneading machine than one that is too small. In a larger machine, you can allow the dough to rise in the bowl. With a machine that is too small, the dough would ooze out. As a rule of thumb: you can allow around 60% of the maximum flour quantity to rise in the bowl. Alternatively instead of one larger machine, you can choose a smaller model with an additional second bowl.
Liftable kneading arm and removable bowl
As a result, the machines are easy and convenient to operate. All the Häussler dough kneading machines offer the liftable kneading arm and removable bowl – up to the SP 40 KA model. (Except for the F models of the SP series). As a result, the dough removal is very convenient and cleaning is very easy.
Let the machine work by itself – while you take care of the oven, serve the guests or simple enjoy your free time. You set the desired kneading time with the timer. Then the machine switches off automatically bread dough requires around 15 minutes of kneading time; bright yeast doughs take around 8 minutes. You can find reference values for common dough types on the next page.
Robust performance and long service life
Häussler appliances are designed to be extremely robust and durable. This philosophy applies especially to our dough kneading machines. Only high-quality materials and components are used. A dough kneading machine from Häussler is the perfect complement to a wood-burning oven or electric stone oven. And just like the oven, the dough kneading machine is built according to a solid fundamental principle. It is not a highly-sophisticated electronic kitchen machine but rather a reliable work appliance. Many of our dough kneading machines have been used for decades. Benefit from Häussler’s years of experience.
Cost-effective power consumption
The power consumption is very limited thanks to the powerful industrial motor. The Alpha operates, for example, with 370 watts. As a result, kneading 5 kg of dough costs only around 3 cents. Compared with a conventional kitchen machine with 1800 W, that’s 6 x cheaper!
You are making the right choice with our Alpha – whether the dough quantity is for our small Mono electric stone oven or for some greater need. Starting from 400 g of flour, it is already ready for use. With 2 kg of flour, you let the dough rise in the bowl and even with 3 kg of flour, the Alpha kneads smooth, supple and relaxed doughs. A second bowl available as an accessory makes Alpha interesting for greater need. It effortlessly kneads all types of dough – from soft yeast dough to heavy rye dough thanks to the professional spiral kneading system. The robust industrial motor and the sturdy chain drive make sure of this.
But the Alpha can do even more:
with the agitator available as an accessory, it turns into an all-rounder and beats the fluffiest cream and egg whites as well as creamy batters. The kneading arm that can be folded back and the removable bowl facilitate easy dough removal and easy cleaning. A really super-strong machine.

Kneading dough made easy
Soft, pliable doughs
Only good dough makes good bread! The powerful and precise Centra spiral kneading system uniformly mixes and intensively kneads your doughs. The different rotation speeds of the dough hook and bowl support the effect of the homogeneous mixing. The working radius of the massive dough hook extends to the middle of the bowl and also facilitates the processing of the smallest quantities (around 10% of the highest quantity can be kneaded as a minimum quantity).
The heart of our dough kneading machines is a robust industrial motor that shows its strength even with heavy doughs. The quiet operating noise level and good footing of the machines prove it.
Easy to clean
Up to model SP 40 KA, the bowl can be removed and the kneading arm lifted up. As a result, the machine is easy to clean and handle.
All parts that come in contact with the dough such as the kneading arm and bowl are manufactured from high-quality, food-safe stainless steel.
The housing is made of thick sheet steel and is impervious due to a powder coating. The chain drives for the kneading arm and bowl last for a lifetime.
All of our machines are equipped with a safty switch. The machine automatically switches off when the kneading arm or protective cover is lifted up. All machines are GS (“tested safety”) approved.
The integrated timer allows an easy setting and monitor of the duration of the kneading time. The machine automatically switches off after the set time and prevents over-kneading of the dough.
The Häussler dough kneading machines are equipped with a timer, which means the machine automatically switches off after the set time has elapsed.
All parts that come in contact with dough are made from stainless steel. The bowl can by easily removed with a rotation up to model SP 40 KA – thanks to a bayonet lock.

The high-quality materials ensure a long service life even when processing heavy doughs.
Well thought-out details
The cover of the SP machines can be folded back and the entire kneading arm can be lifted up.
Pneumatic springs & cord minder
The cord minder is on the back so that the power cable is always tidy. The pneumatic springs assist the lifting of the kneading arm and hold it upright.
