Professional knowledge about dough
What is meant by a good dough? A good dough is rich in oxygen, light and fluffy in consistency, smooth on the surface and flexible in the tension. The gluten in the flour must be opened up so that the dough becomes a homogeneous mass. You can of course also knead doughs traditionally by hand. But since the incorporation of oxygen is so important, you must forcefully dig in for around 30 to 40 minutes. You have it much easier with a dough kneading machine. This produces a better result in only 12 minutes.
Don’t be misled: kneading dough is promised by many domestic appliances today. The result, however, often has nothing to do with a kneaded dough but rather with blending or whisking the ingredients. For a professionally kneaded dough, we definitely recommend the Centra Spiral Kneading System.
Centra spiral kneading system
Both the kneading hook as well as the bowl turn here at the same time. But they rotate with different speeds so that a slight displacement results and the kneading hook plunges into the dough in a different place again and again. In this way, each section of the mass is reliably reached. The dough is thoroughly kneaded – from front to back, from top to bottom – better than is possible by hand. Plenty of oxygen is incorporated thanks to the constant submerging of the dough hook. As a result, you get a dough with wonderful elasticity and perfect surface tension. Our dough kneading machines are very flexible. The strong kneading arm works from the middle of the bowl outward to its edge. Even small and very small quantities (up to 10% of the maximum quantity) can be processed – still with an optimal kneading result. Strength is required to knead dough. That’s why our machines have powerful industrial motors, which even though they provide a great deal of torque, use little wattage. The power transmission takes place via an extremely sturdy and virtually maintenance-free chain drive. The housings are made of sturdy metal. Kneading dough correctly
Our kneading machines work especially powerfully. Please make sure that the doughs are not kneaded too long. Because too much kneading can damage the dough. When the gluten is over-kneaded, the bread will no longer rise correctly. That’s why each kneading machine has a built-in timer, with which the correct kneading time can be set and monitored. With 1-speed machines, the dough is kneaded completely with one constant speed. On the other hand, with 2-speed machines the dough is first mixed slowly and then kneaded intensively. This is an advantage especially with high gluten wheat or spelt doughs.
Capacities
Guideline: it is ideal to tailor the kneading machine to the capacity of the oven. And: better to buy a larger kneading machine than one that is too small. In a larger machine, you can allow the dough to rise in the bowl. With a machine that is too small, the dough would ooze out. As a rule of thumb: you can allow around 60% of the maximum flour quantity to rise in the bowl. Alternatively instead of one larger machine, you can choose a smaller model with an additional second bowl.

As a result, the machines are easy and convenient to operate. All the Häussler dough kneading machines offer the liftable kneading arm and removable bowl – up to the SP 40 KA model. (Except for the F models of the SP series). As a result, the dough removal is very convenient and cleaning is very easy.
Timer
Let the machine work by itself – while you take care of the oven, serve the guests or simple enjoy your free time. You set the desired kneading time with the timer. Then the machine switches off automatically bread dough requires around 15 minutes of kneading time; bright yeast doughs take around 8 minutes. Only good dough makes good bread! The powerful and precise Centra spiral kneading system uniformly mixes and intensively kneads your doughs. The different rotation speeds of the dough hook and bowl support the effect of the homogeneous mixing. The working radius of the massive dough hook extends to the middle of the bowl and also facilitates the processing of the smallest quantities (around 10% of the highest quantity can be kneaded as a minimum quantity).
